INGREDIENTS (Serves 2)

  • 1/2 cup greek yoghurt
  • 1/2 cup whole milk
  • 2 tablespoons chia seeds
  • 1 handful chocolate granola or seeds/nuts
  • 1 handful raspberries
  • additional yoghurt – for topping couple of spoons for each jar.
  • Maple syrup to drizzle.

INSTRUCTIONS

  • In a medium bowl, mix together the yogurt and milk. Stir in the chia seeds. Pour into individual jars, to about half way/two thirds depending on size of jar, push in a few raspberries to the bottom. Cover and set in the refrigerator overnight. If you can, stir the chia seed mixture a couple times after putting it in the refrigerator (after 30 minutes, after 1 hour).
  • In the morning, give the chia seed pudding a good mix, breaking apart any clumps.
  • Spoon on top  another spoonful or two of yogurt, if desired. Top with your favourite chocolate granola or mixed seeds and nuts and a few fresh raspberries. Drizzle with maple syrup
