Caramel slices – makes 10 slices

These Caramel slices are made from healthy raw ingredients to satisfy that sweet tooth, they are still calorie dense at 350 calories a slice, so go steady. Of course you can cut into smaller slices and reduce your calories that way.

Ingredients:

Base

  • 120 grams of  Almonds
  • 120 grams (aprox 6) Medjool dates (pitted)
  • 60ml Melted Coconut oil
  • 25 grams of  Desiccated coconut
  •  ¼ Teaspoon Sea salt flakes

Caramel layer

  • 240 grams (aprox 12) Medjool dates (pitted)
  • 105 grams Almond butter
  • 2 Tablespoons maple Syrup
  • 2 Teaspoons Vanilla extract

Topping

  • 60ml Melted Coconut oil
  • 35 grams Raw Cacao powder
  • 180 grams Maple syrup

Method:

  1.  Line a 20cm square slice tin with baking paper.
  2. To make the base, place the desiccated coconut, almonds, dates, melted coconut oil and the sea salt in a food processor and process until you have a consistency of  fine breadcrumbs. Then using the back of a wet spoon press the mixture into the base of the tin and put in the fridge to set for 30 minutes.
  3. To make the filling (caramel), first warm the dates in some boiling water for 10 minutes then place the dates, almond butter, maple syrup, vanilla in the cleaned food processor and process until smooth aprox (1-2 minutes). Pour onto the base and spread evenly and then refrigerate until set.
  4. Now for the topping, place the cacao, oil and maple syrup in a small  heatproof bowl over a saucepan of simmering water and stir until smooth. Pour the mixture over the caramel and make an even topping and now finally put in the freezer for 2 hours.
  5. Remove from the tin and cut into bars to serve. The slices need to be kept chilled and served from the fridge, they will last a week in an airtight container. (If you have strong willpower!)
