This simple recipe is naturally sweetened and makes a thick and creamy pudding that can be eaten for dessert, breakfast or a snack. Chia seeds are high in quality protein, fibre, Omega 3 and magnesium.
INGREDIENTS: serves 4

– 360 ml Almond milk
– 24 grams cacao powder
– 75 ml maple syrup
– 1/2 teaspoon ground cinnamon
– 1 pinch sea salt
– 1/2 teaspoon vanilla extract

METHOD:
1. Add the cacao powder, maple syrup, ground cinnamon, salt, and the vanilla essence to a bowl and whisk to combine. Then add a little of the almond milk and whisk until it forms a paste, keep adding the remaining almond milk and whisk until smooth.

Add all of the chia seeds and whisk again to combine. transfer into serving jars or bowls and cover and refrigerate overnight, or at least 3-5 hours (until it’s achieved a pudding-like consistency). Best to eat fresh but can be left in fridge for 4-5 days. Serve chilled with desired toppings, such as chopped bananas, granola, or coconut whipped cream.
