Definitely not boring stuffed Chicken Breasts

Eating chicken breasts are one way of boosting your protein intake and are a go to meal for a lot of people, however they can get a little boring! Change things up a bit by creating pockets in the breasts, stuffing the with delicious ingredients and pop in the oven to bake.Easy to make and serve with a fresh salad for Lunch or Dinner.
4 raw chicken breasts (skinless)
2 Tablespoons of olive oil
150 grams of baby spinach leaves
100 grams low-fat feta cheese,
60 grams sun-dried tomatoes, finely chopped
1 Teaspoon garlic powder or finely chopped garlic clove
freshly ground black pepper
Preheat the oven to 180°C.
Heat the olive oil on high heat in a large pan and fry the chicken breasts on both sides until golden brown and caramelised. two at a time is usually best depending on size of pan. Remove the chicken from the pan careful they will be hot and put to one side.
Add the spinach leaves and garlic to the pan you have just taken the chicken from and cook stirring until the spinach is completely wilted. Now crumble the feta over the spinach Add the crumbled feta, chopped sun-dried tomatoes and mix into the leaves until the cheese has melted. Now remove the pan from the heat and season with freshly ground black pepper.
Your chicken breasts should now be cool enough to cut a pocket in ( just like a pitta bread), Take a sharp knife and cut a slit in the side of the breast, you will notice it is still uncooked in the centre.
Spoon all the stuffing mixture from your pan into each chicken pocket. ok you are now ready to finish cooking them in the oven place each stuffed breast onto a baking tray and bake in the oven for approximately 18 minutes.
Enjoy with a fresh salad of your choice.
