These delicious home made snack bars are really easy to make and don’t need baking. Makes 12 bars.


3 Tablespoons peanut butter

100 grams Ground almonds

80 grams dark chocolate ( chips or grated from a bar)

10/20 grams dark chocolate for melting

1 Tablespoon desiccated coconut

1 Tablespoon Maple syrup or honey

1 Tablespoon whey protein ( vanilla or chocolate)

1 Teaspoon vanilla extract or essence


Melt your peanut butter with the vanilla extract in a microwave, then stir in the ground almonds and honey, mix well. Next mix in the whey protein and chocolate, the mixture should now combine together like cookie dough, if it is a little dry add  more maple syrup. Flatten the ball of dough out onto a flat baking tray and press down firmly to make 2cm depth slab. Melt some dark chocolate again in the microwave and spread over the top of the slab and sprinkle the coconut over the chocolate evenly. Place in the fridge and allow to chill for 2 hours, cut in bars and then put into a container to store in the fridge.
