Let me share a secret with you, these little beauties are amazing. I usually double up and make a batch of them and freeze them for later use.
Ingredients (makes 12 balls)
1 medium banana
6 soft, large dried figs (approx. 100 grams)
2 Tablespoons of unsweetened cocoa powder
4 Tablespoons of whole almonds or ground almonds (30 grams)
4 Tablespoons of ground flaxseed
6 Tablespoons of vanilla whey protein powder
6 Tablespoons desiccated coconut
Method:
- Peel the banana and slice into thin slices then place most pf the banana in a mini food processor along with the figs, cocoa powder almonds, ground flaxseed, and whey protein powder.
- Blitz well in the food processor, checking that all ingredients are getting blitzed. you need to make the mixture soft enough to make balls with your hands but not too soft. However, if you find that it is too stiff, add in some more of the banana.
- Remove the mixture from the food processor and scoop out a ball size portion with a spoon and make into a ball with your hands (approx. 30g per ball). You should be bale to make 12 table tennis size balls.
- Scatter the desiccated coconut onto a plate and roll each ball in it. Store covered in the fridge or freezer.
