These energy balls taste just like carrot cake, they are also vegan, grain free and gluten free. They are very easy to make, no bake and you will just need a food processor. The recipe says medjool dates as you need the stickiness to hold the balls together, but if you only have chopped dates then soak them in hot water for 5 minutes to get them moist.

INGREDIENTS:

200 grams medjool dates

80 grams walnuts

35 grams shredded carrot

28 grams desiccated coconut

1 Tablespoon chia seeds

1 Teaspoon cinnamon

1 vanilla extract

1/4 Teaspoon nutmeg

pinch of salt

40 grams extra desiccated coconut for rolling

INSTRUCTIONS:

Add all the ingredients ( except the coconut for the rolling) into a food processor and pulse until combined into a dough.

With your hands scoop out some dough and roll into a ball.

Then roll each ball so it is coated in coconut.

Put in your fridge for a least an hour to firm up. You can keep them in the fridge for up to 2 weeks.
