On the go snack to help fuel you on a busy day.

Ingredients: makes 12 energy balls

3 Tablespoons of chopped cashew nuts

3 Tablespoons Goji berries roughly chopped

2 Tablespoons sunflower seeds

2 Tablespoons agave nectar

2 Tablespoons milled flaxseed

1 Tablespoons desiccated coconut

Instructions:

Pulse all the ingredients (apart from the coconut), in a blender util well combined.

Form 12 balls by using your hands and then roll each one into the desiccated coconut. Place on a plate or into a tupperware tub and chill for 30minutes in the fridge.
