Ingredients: makes 12 bars
140 grams cashew nuts
120 grams ground almonds
2 Tablespoons psyllium husk
2 heaped Tablespoons almond butter
1 Teaspoon ground cinnamon
25 grams desiccated coconut
2 Tablespoons date syrup or maple syrup
4 Drops vanilla extract
1 lemon juice and zest
60ml of filtered water
Shredded coconut and lemon zest to decorate
Instructions:
Take a 20cm square baking tin, grease and line with baking paper.
Blend and combine all the ingredients in a food processor. Take the mixture and with a spoon, press evenly into the tray. Sprinkle the top with the shredded coconut and lemon zest, pressing them lightly into the mixture.
Freeze for approximately 2 hours until firm then cut into bars and serve.
