Healthy option chicken coronation recipe. These ingredients serve one but we usually make a batch of these by multiply quantities to match amount of chicken and keep in the fridge for easy lunches.
Ingredients: Serves one
1 chicken breast
100grams greek yoghurt
2 Tablespoons of Pataks Indian marinade paste
1 Tablespoon curry powder
1 Teaspoon Turmeric
Half teaspoon garlic powder
1 Tablespoon raisins or sultanas
Half handful fresh corriander
Sea salt and black pepper to taste
Medium sized potato for baking
marinade your chicken breast in the Indian marinade and leave in fridge for at least an hour.
Put your potato in the oven 200 degrees for aprox an hour until baked, to make crispy rub all over in rapeseed oil or olive oil and grind salt onto skin.
Roast your chicken breast for 30 minutes in the oven until cooked through, pull apart chicken with a fork and put into a bowl. add the yoghurt and spices and mix well.
Now add the chopped corriander, raisins and season to taste, again mix in well.
Cut open your potato and add in the coronation chicken mix.
