Tasty, healthy alternative cookie recipe.

INGREDIENTS: Makes 8 medium cookies

  • 1 CUP Rolled oats
  • 1/4 CUP smooth peanut butter
  •  2 eggs, 2 Tablespoons flaxseed meal + 6 Tablespoons water
  • 2 Tablespoons coconut oil semi melted
  • 2 Tablespoons vanilla extract
  • 1/3 CUP coconut sugar
  • 1 Tablespoon cinnamon
  • 1 Tablespoon baking soda
  • 1/2 CUP mini chocolate chips

INSTRUCTIONS:

  • Prepare the flax eggs by adding the flaxseed meal and water. Let sit for 10 minutes
  • Mix rest of the Ingredients in a bowl and add on the flax eggs
  • Fold in chocolate chips
  • Refrigerate dough for 30 minutes
  • With a small ice cream scoop, scoop out batter, gently flatten with hands, add to a lined baking sheet
  • Bake 350 F for 8-10 minutes
