Tasty, healthy alternative cookie recipe.
INGREDIENTS: Makes 8 medium cookies
- 1 CUP Rolled oats
- 1/4 CUP smooth peanut butter
- 2 eggs, 2 Tablespoons flaxseed meal + 6 Tablespoons water
- 2 Tablespoons coconut oil semi melted
- 2 Tablespoons vanilla extract
- 1/3 CUP coconut sugar
- 1 Tablespoon cinnamon
- 1 Tablespoon baking soda
- 1/2 CUP mini chocolate chips
INSTRUCTIONS:

Prepare the flax eggs by adding the flaxseed meal and water. Let sit for 10 minutes

Mix rest of the Ingredients in a bowl and add on the flax eggs

Fold in chocolate chips

Refrigerate dough for 30 minutes

With a small ice cream scoop, scoop out batter, gently flatten with hands, add to a lined baking sheet

Bake 350 F for 8-10 minutes
