A really tasty sweet breakfast treat.

Ingredients: Serves 2

half banana

1 Teaspoon coconut oil

1 x free range egg

2 Tablespoons oats

1 Tablespoon flax seeds

4 Tablespoons egg whites

Topped with yoghurt, berries and almond butter

Instructions:

Simply blend all the ingredients (except toppings) in a nutribullet or similar until a smooth batter.  heat coconut oil in a frying pan and pour batter in middle to make a pancake, flip halfway so golden on both sides. Put yoghurt and fruit in pancake and fold over spread the top of the pancake with the almond butter.
