This easy to make curry will help boost your immune system. It is a gentle spice and can be enjoyed by all the family, below ingredients make for 2 -3 servings so multiple for a family meal. we usually serve with boiled rice and chappati.

Ingredients: Serves 3

I large coarsely chopped onion

4 garlic cloves chopped finely

1 fresh red chilli coarsely chopped

1 thumb piece size ginger root peeled and coarsely chopped

1 400 gram tin chopped tomatoes

2 teaspoons mild curry powder

1 teaspoon turmeric

half teaspoon ground cumin

1 teaspoon ground corriander

1 teaspoon garam marsala

400 grams raw peeled king prawns

3 tablespoons full fat greek yoghurt

half teaspoon ground cinnamon

large handful baby spinach leaves

small handful fresh corriander leaves (coarsely chopped)

Instructions:

Blend in a food processor or blender the chopped onion, garlic and chilli into a fine puree.

Heat a little olive oil in a large pan, then when hot , add the puree plus the chopped ginger season with salt and pepper cook for 10 minutes. so that the puree changes colour and becomes less pungent in aroma. Now add the chopped tomatoes and all the spices except the cinnamon, cook for a further 10 minutes.

Add the king prawns, prawns and the yoghurt and cook for a final 10 minutes stirring frequently. Stir in the cinnamon and garnish with the  chopped corriander.

Serve with brown rice.
