An easy to make tasty and healthy snack, that will give you an energy boost.

Ingredients: Serves 16

1.5 cups of rolled oats
1/2 cup flax
1/2 cup pecans broken
1/2 cup walnuts broken
3 tablespoon peanut butter
3 tablespoon almond butter
50g goji berries
7 medjool dates
1 cup maple syrup
1/2 cup coconut oil

Instructions:

In a food processor chop the dates for about a minute until they form a stiff dough.
Layout the oats and nuts on a baking tray and toast for 10 mins in the oven at 170 degrees.
Heat the coconut oil, almond butter, and peanut butter in a pan with the maple syrup until all melted together.
In a bowl mix together the  the maple, nut butters and oil mixture with the date dough then add the toasted oats walnuts and pecans, along with the goji berries.
Spread the mixture across a lined square baking tray/dish and bake for 15 mins at 170 degrees until golden.
Allow to cool then cut into equal portions.
