Make this pancake batter the night before and wake up to a easy to make and delicious breakfast. They are so good they are a staple in our house.

Ingredients: makes 6 medium pancakes

1 ripe banana
100g total 0%
6 egg whites
80g oats
Cinnamon
2 tablespoons honey
2 tablespoons peanut butter (smooth)

Topping suggestions, greek yoghurt, handful of blueberries, sliced banana, maple syrup (not included in calories!)

Instructions:

Blend the above to make a batter in a nutribullet or similar.
Leave over night in  the fridge to thicken, give a little stir in the morning and had a very small amount of water if too thick.
In a medium hot pan fry in oil, pour a pancake sized dollop of batter in an, fry until golden, flip when small bubbles start forming on top.

Keep pancakes warm by stacking each new one on top of each other.
Serve with your choice of topping.
