4 x 150g chicken breast
4 x slices of middle bacon
2 x avocado
1/2 red onion
1 juice of lime
5 x cherry tomatoes
Salt and pepper
Place the avocado flesh, tomato, red onion, lime juice, coriander in a mini blender and blend until you get a smooth mix for stuffing.
Season the chicken breasts both sides with salt and pepper.
Cut a pouch into the breast and fill with the guacamole.
Wrap the bacon around the chicken and sear the chicken both sides in an oven proof pan
Transfer to the oven and roast for 30mins at 180 degrees c
Serve with seasonal greens and rice or potatoes wedges
