Another banana bread recipe, this one is really simple to make and ideal for the weekend.

Ingredients: (makes  450g loaf)

3 very ripe bananas

3 large free range eggs

3 Tablespoons of maple syrup

3 Tablespoons of coconut oil

180 grams of almond flour

1 Teaspoon of baking powder

150 grams blueberries

Half Teaspoon vanilla extract


Pre heat oven to 180 C, grease loaf tin (suitable for 45og loaf) with coconut oil and line with  greaseproof paper.

Melt coconut oil in microwave in a small bowl.

Mash bananas with a fork in a large mixing bowl until smooth. crack in the eggs, pour in your melted coconut oil along with your maple syrup and vanilla extract. mix all ingredients into a smooth batter.

Now, whisk in the almond flour and baking powder util well combined then carefully fold in your blueberries set a few aside  to place on top.

Pour your mixture into the loaf tin, drop your spare blueberries on top and push in and now bale in the oven for just under an hour or until cooked, test with a knife, if it comes out clean your bread is baked.
